A Chifa is a Peruvian style Chinese hole-in-the-wall restaurant. Chifa is also Peruvian/Chinese food. There are chifas in every neighborhood and they offer some of the best and cheapest food around. Even in other types of restaurants, the Chinese influence can be seen in many of the foods offered. The fusion of the two cultures and foods dates back to the first wave of Chinese immigration in 1849. Tonight I had pato saltado con verduras y arroz chaufa (duck with vegetables and fried rice) and Gene had chaufa con langostinos. Both were delicious!
